Amaretto Sour

Portland bartender Jeffrey Morgenthaler puts a delicious twist on the classic amaretto sour with the addition of bourbon, rich simple syrup and egg white which appeared in Imbibe. Here is the InstaFoam version.,

1 1/2 oz. amaretto
3/4 oz. cask-proof bourbon (such as Booker’s)
1 oz. fresh lemon juice
1 tsp. rich simple syrup (2:1)
2 drops InstaFoam
Tools: shaker, strainer
Glass: Old Fashioned
Garnish: lemon peel and brandied cherry

Combine ingredients in a shaker and dry shake (no ice) to combine, then add ice and shake well. Strain from a little height as you pour into an Old Fashioned glass over ice cubes and garnish.
