St Elizabeth Allspice Dram is one of those addictive specialties that brings back memories from childhood. Made from a base of Jamaican pot-still rum and infused with the allspice berry I immediately think of Christmas. Food and Winecreated this Allspice Sour but here is our adaptation made with InstaFoam. Cuddle up by the fire with this one and imagine you are skiing at Gstadt…or opening gifts under the tree. Delish!
1 1/2 ounces allspice dram
1/2 ounce aged rum
1/2 ounce lemon juice
1/2 ounce lime juice
1/2 ounce simple syrup (equal parts sugar and hot water)
dash of Angostura and orange bitters
4 drops InstaFoam
Combine all together in a cocktail shaker and add ice. Shake for 20 seconds. Strain into a cocktail glass and garnish with an orange triangle and brandied cherries.
